Résumé
Le terroir est devenu un enjeu sociétal et les consommateurs français, encouragés par le contexte de crises alimentaire et sanitaire, ont modifié leurs comportements alimentaires. Leur intérêt pour les produits de terroir et leurs territoires de production croient significativement. Face à ce constat, on est en mesure de s’interroger sur la relation des consommateurs au lieu en investiguant les effets du rapport du consommateur au territoire sur sa relation aux produits de terroir ainsi que la réciprocité de ce lien. L’objectif de cette recherche est d’identifier les travaux ayant porté sur la relation au produit de terroir et au territoire et d’examiner leurs connexions mutuelles. En cherchant à comprendre le rapport du consommateur au territoire et sa relation au produit de terroir, nous serions amenées à discuter le rôle de l’attachement dans les deux sens de la relation. L’attachement révèle une relation affective envers le lieu (territoire) et le produit (produit de terroir). Quand les consommateurs s’attachent à un produit de terroir, ils s’attachent à son arôme, sa texture, sa saveur, sa forme et sa couleur d’une part, et également à la manière dont il a été produit et préparer par les producteurs. Ces mêmes consommateurs peuvent s’attacher au territoire et par conséquent développent des liens qui illustrent l’évolution des valeurs attribués aussi bien au lieu qu’au produit.
Il est important de souligner que l’intérêt pour cette recherche puise son origine dans le cadre du partenariat entre l’Université Paris-Est Créteil et le Conseil Départemental de Seine-et- Marne. Elle vient enrichir les travaux dans le champ du marketing portant sur la relation des consommateurs au lieu en investiguant la réciprocité du lien entre le rapport du consommateur au territoire et sa relation aux produits de terroir. Outre les apports théoriques portant sur l’attachement au lieu et plus précisément son articulation avec les produits de terroir, les implications managériales et institutionnelles, sont fortes et permettront aux collectivités territoriales (régions, départements, communes), dans une perspective raisonnée et responsable de mobiliser l’attractivité du territoire en vue de la création de l’attachement aux produits du terroir et/ou d’utiliser ces derniers comme point d’entrée pour alimenter et attirer différents publics (touristes, résidents, entreprises, etc.), voire les sédentariser. D’un point de vue méthodologique, notre approche qualitative avec les acteurs (producteurs, collectivités, entreprises, etc.), du département de Seine-et-Marne nous semble enrichissante en ce qu’elle permettra de comprendre en profondeur le rapport du consommateur au territoire et sa relation avec les produits de terroir. Ainsi, cette recherche contribuera à faire des propositions de recommandations stratégiques qui permettront une meilleure compréhension de l’attachement au produit du terroir et aux différents déterminants de l’attachement à un produit.

Abstract
Terroir has become a major social issue and French consumers, encouraged by the context of food and health crises, have changed their eating habits. Their interest in local products and their production territories is growing significantly. Faced with this observation, we are in a position to question the relationship of consumers to place by investigating the effects of the consumer's relationship to the territory on his or her relationship to terroir products as well as the reciprocity of this relationship. The objective of this research is to identify the work that has examined the relationship between the terroir product and the territory and to examine their mutual connections. In seeking to understand the consumer's relationship to the territory and his or her relationship to the terroir product, we would be led to discuss the role of attachment in both directions. Attachment in the investigation of the meaning of the relationship is important because it reveals an affective relationship for the place (territory) and the product (terroir product). When consumers become attached to a terroir product, they become attached to its aroma, texture, flavor, shape, and color on the one hand, and they also become attached to the way it was produced and prepared by the producers. These same consumers can become attached to the territory and therefore develop links that illustrate the evolution of values attributed to both the place and the product. It is important to emphasize that the interest in this research originates from the partnership between the Université Paris-Est Créteil and the Conseil Departmental de Seine-et-Marne. It enriches the work in the field of marketing on the relationship of consumers to place by investigating the reciprocity of the link between the consumer's relationship to the territory and his relationship to local products. In addition to the theoretical contributions concerning attachment to place and, more precisely, its articulation with local products, the managerial and institutional implications are strong and will allow local authorities (regions, departments, municipalities), in a reasoned and responsible perspective, to mobilize the attractiveness of the territory with a view to creating attachment to local products and/or to use the latter as an entry point to supply and attract different publics (tourists, residents, businesses, etc.), or even to make them more settled. From a methodological point of view, our qualitative approach with the actors (producers, communities, companies, etc.), of the Seine-et-Marne department seems to us to be enriching in that it will allow us to understand in depth the consumer's relationship to the territory and his relationship with local products. Thus, this research will contribute to making proposals for strategic recommendations that will allow for a better understanding of the attachment to local products and the different determinants of attachment to a product.
